- 3 lbs zucchini
- ¼ cup sliced almonds
- 1 Tbsp olive oil
- ⅔ cup parmesan, grated
- salt and pepper, to taste
Cut the ends off the zucchini and thinly slice using a grater or knife.
Heat 1 Tbsp olive oil in a saute pan over medium heat. add ¼ cup sliced almonds and toast until golden brown.
Add the sliced zucchini and remove from the heat. Toss zucchini and almonds together and season to taste with salt and pepper.
Place on a serving dish and top with ⅔ cup grated parmesan cheese.
