Peel the beets and boil until tender.
Meanwhile the beets are cooking, dice tomatoes, onion, and slice green onions. Set aside.
Once the beets are cooked, drain liquid and cool for 10 to 15 minutes.
Once the beets are cool, dice them into 1 inch cubes and toss them with sesame oil in a mixing bowl.
After the beets are fully coated in sesame oil, add in the diced tomatoes, onion and green onions.
Add the soy sauce.
Toss everything together. Season with salt and pepper to taste.
Once everything is well incorporated, chill for a 2 hours. Then serve.
