Ingredients
- 2-3 beets, depending on their size
- 3 large roma tomatoes, small diced
- 1/2 medium or 1 small red onion, small diced
- 1 bunch of green onions, sliced
- 2-3 tbs of low sodium soy sauce, or tamari sauce
- 2 tbs of sesame oil
- salt and pepper, to taste
Instructions
- Peel the beets and boil until tender.
- Meanwhile the beets are cooking, dice tomatoes, onion, and slice green onions. Set aside.
- Once the beets are cooked, drain liquid and cool for 10 to 15 minutes.
- Once the beets are cool, dice them into 1 inch cubes and toss them with sesame oil in a mixing bowl.
- After the beets are fully coated in sesame oil, add in the diced tomatoes, onion and green onions.
- Add the soy sauce.
- Toss everything together. Season with salt and pepper to taste.
- Once everything is well incorporated, chill for a 2 hours. Then serve.
