
Apple, Beet, Carrot (ABC) Soup

Equipment
- 1 stock pot
- 1 vegetable peeler
Ingredients
- 4 apples
- 1 large beet
- 4 carrots
- 4 stalks celery
- ½ large onion
- 5 cloves garlic
- 2 tbsp olive oil, any cooking oil is fine
- 2 quarts vegetable stock
- 2 cups milk, soy milk, or any other milk alternative works as well
- 2 – 3 tbsp honey
- pinch cardamon, optional
- salt and pepper to taste
Instructions
- Wash and peel beets and carrots. Peel garlic, if necessary.
- Heat up your stock pot in medium heat. Meanwhile your stock pot is getting to temperature , have your stock heating up in another pot as well. (This method will reduce your cooking time.)
- Chop up carrots, celery and onions. Place inside a bowl. Mince garlic and set aside. Dice beets and set aside.
- Once you stock pot is up to temperature, add your cooking oil. Once oil is shimmering, toss in your carrots, celery and onion. Sweat the vegetables for several minutes, then toss in your garlic.
- After vegetables are sauteed, pour your stock into the stock pot. Then add in your diced beets. Cook until the beets are tender.
- Blend the vegetables in the pot and finish it with milk. Add honey and cardamon. Season with salt and pepper. Voila, ready to serve!
